I usually have Pira energy bars for breakfast since I don't feel like waking up early. Sure, they're made mostly of apple cores and Chinese newspapers, but the mint and caramel flavors aren't bad.

If you want something hot though... how's an omlette sound?

Sorry, "Pria", not "Pira". Supposed to be for mid afternoon, but I have them half of the mornings anyway... Guess I should actually eat a healthy, normal breakfast once in a while. Maybe this thread will give me an idea.

Hehe, I didn't do it yesterday but today because I didn't have any really FRESH eggs and I wanted to do it just like Delia said. In fact, I am sitting here, eating happily away. The whole thing was pretty easy to do, gives you quickly earned confidence in your cooking skills! =D

Tastes good, though I didn't have any chives which I will definitively add next time (along with some other stuff, this just tastes a little bit too dull). But it sure is a good way to start the day! Now excuse me, I want to finish up the rest before it gets cold.

Anyone have any good ideas for a salsa omelette? All I have in the house I am currently in is a couple of eggs and some salsa. Google isn't much help for simple/cheap receipes, so I ask you on the street for your kind word.

Salsa omlette:

  • 3 large eggs
  • 1/4 cup spicy, chunky salsa
  • 1/4 cup shredded cheddar/monterey jack cheese
  • a few tablespoons of half 'n half
  • butter, salt, peppper

In a small bowl, scramble eggs. Beat in a few tablespoons of half n' half until the mixture becomes fluffy and uniform in color. Add salt and pepper to taste.

Butter a large frying pan on medium heat.

When the pan is greased and hot, add the eggs slowly, making a thin layer. Allow the bottom of the eggs to harden. While the top is still wet, use a fork to transfer chunks of salsa to the top of the cooking eggs. (Save the liquid part of the salsa)

Once the eggs + salsa is cooked nearly all the way through, top it with the cheese.
Now, using a spatula, fold the eggs in half, trapping the cheese inside. After a few seconds, flip the folded eggs over to make sure it's heated evenly. Do this a few times until melted cheese starts to run out the sides.

It's done! Remove the omlette from heat, and get it onto a plate.

Top it with the thin part of the salsa (it's a picante sauce, arriba!).
