I stumbled across this site.
It is full of amazing recipes that tend to not be featured on American websites.
Of course it is in Japanese, but it is very easily translated using any online translator; I use http://www.excite.co.jp/world/english/

The link leads to an index file (I haven't found the main page yet) but you can search for any of the html files for many great recipes.

I didn't see anything that looked particularily awesome in these pages, but there are some good ideas. Mostly putting ingredients I never thought of (yakisoba, fried rice, eel) into an omelet. I'll also throw in some parsley & fish cake next time I make tempura.

Tip: ゴーヤ (my translator renders it as "Balsam pear") is bitter melon. You can usually find it in Oriental supermarkets.
I made a tofu scramble with it once, it wasn't that great but maybe these recipes are better.

Bitter melon...blech.

My parents love it to death, but I can't stand the stuff. Guess I'm just a twinkie like that.
