First, get Lamprey eel - (its the freshwater kind and the only kind I know about)

Clean it, like taking guts out and whatnot, then take the rubbery string bit in the spine out (dunno the real name)

For me - we BBQ it on hot coals outside

We get applewood and burn a load of wood until it goes down to red coals and lay the eel on it facing upriver so that they will come back in the next season - flip them, and you can tell they are done when liquid coming from it is clear.

Brush off the coals and cinders and eat hot.

(I come from nor Cal - this is a traditional way of eating eels for my family)

dunno if this is feasable for you - but at any rate the heat does the eel good - BBQ would work in a pinch.

Lampreys are not true eels and a popular food in Western Europe, but for the most part no one eats them in North America. Too bad, I'd like to try them. I hear they taste a bit like pork.

Depends on what kind of eel you have.

I got some rock eel a few months back, cut the fins/head/tail off, broiled it for a few minutes, until the fat started to come out (smelled like I was cooking butter, they're really fatty), and then stir-fried them with some fresh mushrooms, salt and pepper (and a little bit of onion, iirc). Served it on fresh spinach, just because I had a ton of it. Was awesome.

Nothing beats freshwater eel cooked in tinfoil on campfire coals. drool
