okay i've been attempting to cook ramen.
i cheated and bought dashiMOTO = dashi msg and the result was good.
i used white miso+dashimoto+ chili oil
i have not got my hands on white sesame powder, i heard it would enhance the soup.
anyone here knows howto make dashi stock? sometimes when i'm free i dont mind painstakingly doing the stock.
how would you make your ramen soup spicier? chili oil doesn't do much really, 5 TB and still no kick. it just enhance the soup.
i added thai fish cake to my soup, the lemon grass flavour rubs off. - TIP

Use katsuobushi (bonito flakes) and a piece of kombu. It's not that hard, only takes a few minutes, the toughest part may be finding where to buy those ingredients.

The authentic method would be nanami togarashi. This includes chili powder, white sesame and some other spices.
