I recently got into making Okonomiyaki and it's a surprisingly easy process and turned out excellent. My local Walmart even had Kewpie mayo in the weird squishy bottle from Japan (tho it sadly seems to have disappeared since, it's pricey and not redneck fare so it wasn't selling, so I'll have to get more online). I used plain flour, so getting the specialized okonomiyaki flour should be an improvement too. Used a ketchup, Worcestershire, honey mix instead of actual okonomi sauce, which turned out decent.
It's fun to experiment with throwing different stuff in.
