WinAMP for audio, MPlayer for video.

Quintessential Player. Even though it's a beta and it's full of bugs, it still annoys me less than Winamp, WMP or Foobar bloody 2000.

GOM player, it's good for the weird videos that won't play in Windows media, it also lets you capture the video as a gif.
