Yeah, uh...I have a date. Dating isn't really something I'm good at. I know how to behave and everything, but on a more abstract level...how do I conduct girlfriend things with her, assuming it goes well?

Dinner is a good idea,... Just be curious about her, ask her questions, learn from her, while also providing info about you, so that it does not look one-sided.
Most notably, you should get to learn enough about her interests so as to give you an idea about your next date.
Now depending on both of your age/culture/characters, you might end the date at the restaurant, or take her to her/your home, with or without another dring + sex. But the more cautious approach is not to be too hasty, unless you see this as a one night stand.
I definitely don't see this as a one-night stand; I think that any relationship with this girl, based upon what I know of her personality (we're already acquaintances, though not close friends or anything), would probably be medium-to-long-term and likely quite slow-paced.
We're college-aged and both among the more staid students at a fairly libertine school.
