I'm getting increasingly interested in the idea. It seems like hardly anyone can actually listen to music in 5.1 though.

According to wiki (http://en.wikipedia.org/wiki/Surround_sound), the arrangement of speakers is supposed to be different for music as opposed to movies. That must be a bother.

No, unless you have the speakers arranged like so:

For movie surround, the front speakers should be placed at the edges of the screen, toed in to face the central listening location, and the tweeters should be ear height. The center speaker should be placed behind the screen (when using projection) or over or under a TV, and as close to ear high as possible. Side channel speakers should be placed high on side walls, to the left and right of the listening position, equidistant from the front speakers and the rear speakers. Rear channel speakers should be placed high on side walls, slightly behind the listening position, and should have a normal high-quality monopolar construction.

And that's for movies. For music, 6.1 doesn't exist. http://en.wikipedia.org/wiki/Surround_sound says so.

I have yet to listen to a song encoded in mp3 surround, aac5.1 or wma pro 5.1 so I'm not sure if 5.1 enhances the experience at all.

Some receivers allow you to push the music through all 5 speakers to mimic surround. I don't like that arrangement very much, but you should listen to it for a while and decide for yourself.

My opinion is if you're going to get 5.1 get it for movies or video games if you have something like a Xbox 360 or PS3. It does enhance the experience there, in my opinion.

Meh, I used to play around with surround system for my PC. Ultimately I traded them in for a quality pair of Sennheiser headphones. Haven't really looked back since. 99.9% of music is in stereo anyway, and I find, with a good soundcard with EAX and spacialisation, I don't really lose much in games and movies either. With a really good pair of stereo headphones and EAX, you can still tell from which direction those creeping steps are coming from.

Also, takes up very little room, doesn't bother the neighbors, less of a hassle, room-noise is less of a problem, and it's easier to pick up quiet, high-mid frequency nuances.
