Alright... so I've been really getting into my music lately, and I find that while I used to like genres like black metal, black death, punk, blues, etc, I now find that the majority of bands out there (now that I'm getting back into music, after having sort of left it for a while in pursuit of other hobbies), especially the genres I listed above, too bland for my tastes!
I need variation and style.
Most bands focus so much on one sound that I get bored with them and I can't even listen through a single album in one sitting (especially "heavy" bands like most grindcore, black metal/death metal, as well as electronic music, classical music, and most punk and blues- with some notable exceptions).
I took it upon myself to look up the Hellsing soundtrack, which is fucking awesome in every way, and I realize what I need is variation like what's displayed in that.
Blues, jazz, punk, various electronica, and classical. And all with a unique style. Keeps me interested from beginning to end.
It's so hard to find this, and I can't think of where to begin. So I'd like suggestions about bands, etc that offer this sort of sound.

I'm looking for music that isn't confined to one style, and that is actually decent and interesting.
I don't really care what elements it has in it- metal, punk, classical, country, whatever.
I would prefer something with electronic, classical, blues, punk, breakcore, techno, heavy metal, jazz, and DnB elements though, but I'm open to other stuff as well.
I see what you mean, that's what I usually call "crossroads music" (and is usually called "fusion [insert genre here]"). Music where more than one thread of influence can be heard. Amongst other discoveries, lately I've been listening to the Diablo Swing Orchestra (they're free on Jamendo) - they mix gypsy, swing, metal, opera, and others.
You might want to lend an ear to Mike Patton's projects as he is known for his unconventional style (Mr Bungle, especially). Also, a lot of "progressive" music from any main genre usually is open and mixes various styles. Take a look at Archive, Jethro Tull or Ayreon, maybe. The good point with progressive is there are a TON of concept albums, with stories etc., which add to the musical experience and contribute to keep you hooked up from start to finish.

Archive: A little too slow and quiet for me.
Jethro Tull: Awesome.
Ayreon: Too weird, too many styles mish mashed together and they contrast too much.

To be honest I'm not sure I get what you're after and I don't think this would fit it anyway, but I was listening to Scout Niblett when I read this, and looking at some of the bands you like I thought it might be worth mentioning her.
Do want music with a whole lot of things going on in each song and really audible mixing of styles and relatively complex sound, or are you interested in music that has a lot of influences and isn't constrained to one style but is still basically just some guys with guitars (or whatever) and a bit simpler?
