I noticed this image that the AA Bar has. Literature also has one. Other boards don't. Why isn't there a 'contest' open for submission of images for the rest of the boards?

Well, generally when new boards are started, folks can choose things about the board (like the default anonymous name). You're always welcome to submit your title image to http://4-ch.net/req/kareha.pl/1100701398/l50 this thread, I'll add it when I get around to it.
