What kind of stuff have you put in curry? I've used:

Onion - staple
Potato - classic
Green onion - Not sure this does anything
Eggplant - too much work
Jalapeno - I like spicy food
Protein - Beef/chicken/tofu

Any other good ingredients, besides carrots?

I almost always serve cucumber and or yoghurt as a side dish, since I can't stand the heat for long :(

I haven't tried too many strange things in my curry. I usually stick with onion, carrot and potato. I generally don't put meat in mine mostly because I rarely buy meat. Sometimes I put a little soysauce in... I'm not sure wether I like it better that way or not.

I'm wondering how everyone makes their curry? from scratch? I buy golden curry sauce mix boxes from a local asian specialty store. I get the hot kind but it isn't really hot enough anymore. Any suggestions?

It's a LOT easier to use a box. I made it from scratch once and it was pretty hard to thicken it using wheat flour.

For spicyness, just add a whole bunch of crushed red peppers. You can see it bubble ominously after that. If you eat it regularly, you really should think about adding tofu. It's a neutral taste and provides good nutrition.

Thanks, I never even thought about putting tofu in.
I've never cooked with tofu before... How exactly do you go about this? Do you cook the tofu first or what? (I'm clueless)

Lots of ways. You can cube it, then either fry it first or just dump it in to boil with the rest. Alternatively, you can just boil it separately, let it cool, then crumble it into the curry. The firmer the better for that.

Curry! I tried some with diced apples that one time ( ・∀・) and diced sweet potato! it was not bad at all! though for apples I had to put it in the last stage.

This is true for Japanese curry. It's extremely simple and delicious. Read the ingredients only after you've eaten it, and marvel at how something with all that weird random stuff in it can taste so good.

Unfortunately, it's also chockful of MSG (which gives me migraines) and saturated fat. So I'm going to try figuring out how to make it from scratch, even though I don't think anyone in Japan does that. It must be possible, though.

Oh, we add carrots to our curry. My Japanese friend's mom grates an apple into hers (unless she's using Vermont brand, which has apples in it).

I swiped a recipe off this manga translated by these dudes, called Addicted to Curry. I changed a bunch of stuff (didn't have any ginger, wanted to use some cut-up steaky meat instead of ground beef, etc), but it mostly turned out pretty good. Then I messed around with it a few more times until I got something that tasted really freakin' awesome, and, ahh, I guess that's about it.
